The six-course culinary journey begins with Rockefeller Oysters paired with the crisp Chenin Blanc “Norgard Vineyard” 2020 from Napa‑Mendocino. It continues with a Boston Lobster Cake with chili mayo, complemented by the bright Chardonnay “Private Reserve” 2022 from Beringer, Napa Valley. The third course features Roasted Duck Breast with squash and ginger‑honey glaze, harmonized with the silky Pinot Noir “Heritage” 2021 from Black Stallion Estate, Napa‑Los Carneros, followed by Patagonian Toothfish with chicken liver glaze, dried apricot, and black cabbage, elevated by bold Cabernet Franc “Ophelia” 2021 from Napa‑Mendocino. The U.S. Prime Tenderloin with baked Idaho potato is perfectly paired with Cambium 2016 from Sequoia Grove, Napa Valley, and the journey concludes with a decadent Dark Chocolate Pie with cherries, caramel walnut, and Napa ice cream, served alongside Bucephalus Red Wine 2019 from Black Stallion Estate, Napa Valley.
